Ayurvedic Spice Blend
A Classic Blend:
Coriander | Cumin | Fennel | Turmeric | Black Pepper
These five spices are among the most commonly used in India. Revered for their beneficial properties, they form the foundation of a “Kitchen Pharmacy”. I created this blend after seeing it used so often in many Ayurvedic recipes. That way instead of having to add 5 spices to so many dishes I could just add a spoonful of this blend.

Yields: ~ 1 cup ground Ayurvedic Spice Blend
(enough to make roughly 50 meals for 2 people)
Ingredients
26g (heaping 1/3 cup) coriander seeds
34g (1/3 cup) fennel seeds
27g (1/4 cup) cumin seeds
12g (1.5 tbsps) ground tumeric
8g (1.25 tbsps) whole black peppercorns
Preparation
Place a medium mixing bowl on your scale and measure out all your ingredients one by one.
Spoon this mixture in a clean coffee grinder until it’s ~ 80% full. Not all of the spices will fit.
Grind the spices. Hold the lid on firmly and run the grinder while shaking it up and down every 5 seconds or so. Listen to the sound of the grinding; once it has become uniform the spices are ground.
Invert the grinder and hold it upside down. Firmly smack the bottom of the grinder a few times. Carefully separate grinder and lid and place the lid full of spices and the now mostly empty grinder separately on your counter.
Transfer the rest of the whole spices to the now empty grinder. Now that your bowl is empty again, transfer the ground spices from the grinder lid into the empty bowl.
Repeat steps 3 and 4 to grind the rest of the spices; add the ground spices to the bowl.
Using a large fork and spoon (or whisk and serving spoon) mix the spices well until homogenous. Alternate between using the whisk or fork to mix with a circular motion to evenly distribute the spices, and a spoon to scope from the bottom and then stir to ensure no uneven portions are left at the bottom.
Transfer the ground spices to an airtight container and then date and label the container.
Hold the container ~ 6 inches below your nose, and inhale gently but deeply through your nostrils. Savor the incredible scent of freshly ground spices!

This is a versatile blend that can be used in many ways, a good start is as a mild “curry powder”
Always cook the spice blend at least for a few minutes - don’t use raw.
